Bruschetta (pronounced "brusketta") is a classic Italian appetizer that's incredibly easy to make. Like many simple and delicious recipes, it's all about the ingredients here. Use in season tomatoes, visit the bakery for a good loaf of bread, and use your best olive oil.
INGREDIENTS
(serves 6-12)
- 2 cups (400 g) cherry tomatoes, halved
- 1/2 cup (14 g) finely slivered fresh basil
- 2 cloves garlic, halved
- Extra-virgin olive oil as needed
- Salt and freshly ground pepper
- Large loaf of rustic country bread or baguettes
METHOD
- In a bowl, gently toss the halved tomatoes and basil
- Drizzle with olive oil and add salt and pepper to taste
- Gently toss to combine
- Slice the bread into twelve 1/2 inch (12 mm) thick slices
- Preheat a cast iron grill pan over medium-high heat (you can also toast the bread over a charcoal grill, in the oven or in a toaster oven)
- Brush the bread with oil and grill until toasted on both sides
- Gently rub the toasted bread with the cut end of garlic cloves
- Plate the grilled bread and top each slice with the tomato mixture
- Add a little more black pepper and garnish with small basil leaves
- Serve immediately
