Cherry Tomato Bruschetta

Bruschetta (pronounced "brusketta") is a classic Italian appetizer that's incredibly easy to make. Like many simple and delicious recipes, it's all about the ingredients here. Use in season tomatoes, visit the bakery for a good loaf of bread, and use your best olive oil. 

INGREDIENTS

(serves 6-12)

  • 2 cups (400 g) cherry tomatoes, halved
  • 1/2 cup (14 g) finely slivered fresh basil
  • 2 cloves garlic, halved
  • Extra-virgin olive oil as needed
  • Salt and freshly ground pepper
  • Large loaf of rustic country bread or baguettes


METHOD

  • In a bowl, gently toss the halved tomatoes and basil

  • Drizzle with olive oil and add salt and pepper to taste

  • Gently toss to combine

  • Slice the bread into twelve 1/2 inch (12 mm) thick slices

  • Preheat a cast iron grill pan over medium-high heat (you can also toast the bread over a charcoal grill, in the oven or in a toaster oven)

  • Brush the bread with oil and grill until toasted on both sides

  • Gently rub the toasted bread with the cut end of garlic cloves

  • Plate the grilled bread and top each slice with the tomato mixture

  • Add a little more black pepper and garnish with small basil leaves

  • Serve immediately
