Pomegranate is a truly glorious fruit. With it's sparkling seeds and complex sweet AND tart flavour, it's also perfect for making cocktails special. Wonderful any time of the year, pomegranate truly shines during the holidays. Try adding an evergreen garnish like rosemary or a sprig of pine to holiday drinks for the iconic red and green of the season.
INGREDIENTS
(one serving)
60 ml local gin like Phillips Stump Coastal Forest, Sheringham Seaside, Ampersand, Empress 1908, Victoria, Wayward's Unruly ― you get the idea. There's a lot of fabulous gin being distilled here on the Island.
125 ml sweetened Pomegranate juice
15 ml Grand Marnier
Splash of chilled club soda
1 lime wedge
Fresh pomegranate seeds
Sprig of rosemary (garnish)
METHOD
Fill a glass with crushed ice and pour the gin, pomegranate juice and Grand Marnier. Top with the club soda, stir gently and squeeze the lime wedge over the top. Toss in some fresh pomegranate seeds and garnish with a sprig of rosemary.
