Because this dish is so simple, the best ingredients do make a difference. Garden or farmer's market tomatoes, very good olive oil and a proper French baguette will do the trick!
Ingredients:
- 1 French baguette, sliced into ½-inch thick pieces
- 4 ripe tomatoes, diced
- 2 cloves of garlic, minced
- ¼ cup fresh basil leaves, chopped
- ¼ cup fresh parsley, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Optional toppings: chopped red onion, grated Parmesan cheese, black olives

Preheat your oven to 375°F (190°C). Place the baguette slices on a baking sheet and lightly brush each slice with olive oil. Bake in the preheated oven for about 8-10 minutes or until golden and crispy. Set aside.
