Easter is just around the corner, and it's time to start planning your holiday feast. This recipe for maple glazed roast lamb is a Canadian twist on a classic Easter dish, and it's sure to be a hit. INGREDIENTS
- 1 bone-in leg of lamb (5-7 lbs)
- 1/2 cup pure maple syrup
- 1/4 cup Dijon mustard
- 2 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- fresh rosemary & fresh thyme to taste and garnish
- Salt and pepper, to taste
METHOD:

Preheat your oven to 350 degrees F.

In a small bowl, mix together the maple syrup, Dijon mustard, apple cider vinegar, minced garlic, dried rosemary, and dried thyme.

Season the lamb with salt and pepper, then place it in a roasting pan.

Brush the maple glaze all over the lamb, making sure to coat it well. Lay fresh rosemary and thyme on and alongside the lamb.

Roast the lamb in the preheated oven for approximately 2-2.5 hours, or until it reaches an internal temperature of 145 degrees F (medium-rare) to 160 degrees F (medium).

Baste the lamb with the remaining maple glaze every 30 minutes while it cooks.

Once the lamb is fully cooked, remove it from the oven and let it rest for 10-15 minutes before carving.
