Summer Fruit Parfait

Summertime and the living ought to be easy—including breakfast. Hot weather calls for cool refreshing food. And a summer fruit parfait is probably the easiest breakfast you can whip up. Go as simple or as fancy as you like. Here are the basics:

INGREDIENTS:

A mix of summer stone fruits & berries: 

  • I large nectarine
  • 1 large peach 
  • 1 cup of blueberries 
  • Handful of large strawberries or raspberries or blackberries
  • Fresh herbs: mint leaves, thyme sprigs, herb fennel (optional)
  • 1/4 cup of honey 
  • 2 teaspoons lemon juice
  • zest of 1 medium lemon
  • 2.5 cups of plain, vanilla or lemon yogurt
  • your favourite granola (optional)

METHOD:

If you're using thyme, crush the leaves to release the fragrant oils and place in the bottom of a large bowl. 

Pit and cut the stone fruits into thin slices. Arrange the nectarine over the thyme leaves. Layer the berries over the nectarine and add the peach slices on top. Sprinkle lemon zest and pour lemon juice and honey.

Let the fruit macerate for an hour covered at room temperature.

After maceration add the blueberries and gently toss the fruit together.

Using a slotted spoon to drain off excess liquid, layer fruit, yogurt and granola (if using). Garnish with fresh berries and chopped mint leaves, 

Strain left over fruit/honey juices through a fine sieve and reserve to add to sparkling water or cocktails.
