Buttermilk Blueberry Waffles

Pancakes are delicious, but a stack of crispy golden waffles is sublime. Toss in fresh blueberries and a dusting of confectioner's sugar and...swoon.

INGREDIENTS

2 cups all purpose flour +1 teaspoon for adding to fresh berries
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
1/2 cup  melted & at room temp
2 large eggs at room temp
1 cup fresh blueberries 
Nonstick cooking spray
Confectioners' sugar

 

METHOD

Preheat oven to 270 degrees; set a rack on a baking sheet in the oven. Preheat waffle iron according to manufacturer's instructions.

In a medium mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a large mixing bowl whisk together buttermilk, butter, and eggs. Add the dry mixture to wet and stir until just combined. Sprinkle the teaspoon of flour over the berries, tossing gently, and fold into the batter. 

Lightly coat waffle iron with cooking spray. Pour the batter onto the centre of your waffle iron, making sure the batter is spread to the edges with a spatula. How much batter you use will depend on your iron. Cook according to the iron manufacturer's instructions or until waffles are golden.

Stack cooked waffles onto the rack in the oven until you're ready to serve. 

Dust waffles with confectioner's sugar and fresh blueberries. Sweet butter, sugar and lemon or a dollop of whipped cream are also lovely.
